Egg yolks- 5 nos.
Sugar- 225 gms.
Milk- 500 ml
Single cream- 125 ml
Vanilla extract- 1 tsp.
Vanilla pod- 1 no. (Cut into pieces)
Mint- A sprig
Serves: Six > Time Required: 20 Minutes + Freezing Time
- Take a large bowl, add in sugar and egg yolks. Whisk them together until the mixture becomes pale yellow and thick. Heat the milk to a simmer and pour it in the bowl and whisk the mixture further.
- Rinse out the pan and pour the mixture into it. Cook over a low flame, until the mixture becomes thick enough to coat the back of a spoon. Do not let the mixture boil as the egg would scramble otherwise. Pour the cream and vanilla extract and stir. Turn off the flame and let the mixture cool down.
III. Strain into a freezer box and freeze or ice-cream maker and churn until frozen.
- Scoop out and serve in chilled glasses and garnish with a mint sprig or a vanilla pod strip.
